Roasted Garlic Ricotta Dip

 This Roasted Garlic Ricotta Dip is rich, creamy, and savory! With fresh dill and roasted garlic it’s packed with flavor perfect for dipping and for spreading!

Ricotta Cheese – This is a mild, creamy, soft cheese that has a slight grainy texture that is similar to cottage cheese. It can be used in a variety of dishes both savory, like this dip, and sweet!

Fresh Dill – We love the flavor of dill so we’re adding plenty of it to this dip. The tangy flavor pairs well with the ricotta cheese and the savory garlic. You may also use dried dill – just add to taste, starting with about half the amount called for.

Roasted Garlic – You’ll roast an entire head of garlic for this dip! Roasting the garlic will take away some of the bite and lessen the stronger flavors in the garlic so you can enjoy it without it being overpowering!

Dippers – Crostini, fresh vegetables, and crackers are great options. See below for more suggestions!

How To Roast Garlic:

Prepare: Preheat your oven to 400 degrees. Start with a whole head of garlic. Remove the papery outer layer and then use a knife slice off about a 1/2 inch of the top of the cloves.

Drizzle some oil over the top and then either wrap it tightly in aluminum foil and place on a baking sheet, or put the head of garlic into a muffin tin and cover that with some foil.

Roast: It’ll take at least 30 minutes for the garlic cloves to begin caramelizing. Check them at about that time and if they need longer continue roasting until the cloves are golden brown and soft to the touch.

How To Make Roasted Garlic Ricotta Dip:

Add the ricotta and dill to a small bowl and give it a good stir to combine.

Squeeze the entire head of garlic into the ricotta and add a bit of oil and salt. Stir well to combine.

Transfer to a serving bowl, drizzle the top with olive oil, and serve with your choice of dippers!

Serving Suggestions:

There are a few obvious choices for dipping/spreading here. That would include pretty much any kind of raw veggie like carrot sticks, celery stalks, bell pepper strips, or sliced cucumber.

Crostini is a favorite of ours and this dip is perfect for spreading on it or just about any kind of crusty bread. It’s also great for crackers and chips!

Pita chips are a good option for this. And if you want a nice contrast to go with the savory dip, serve it alongside some fresh fruit like apples or pears!

  • 1 tablespoon fresh dill
  • 1 head roasted garlic
  • 2 teaspoons olive oil divided
  • 1 teaspoon salt
  • Crostini, fresh vegetables, chips, crackers for dipping/spreading

INSTRUCTIONS

  • In a medium bowl, combine the cheese and dill. Squeeze the entire head of garlic into the mixture. Add one teaspoon of olive oil and the salt. Stir well to combine.
  • Place in a serving bowl and drizzle with the remaining teaspoon of olive oil.
  • Serve spread on crostini or as a dip for vegetables, chips, or crackers.
