My Dill Pickle Ham Salad is an easy way to use up some of that leftover ham! My recipe is a creamy mixture of finely chopped ham, pickles, boiled eggs, onions, and herbs. This ham salad recipe is perfect on a croissant or a couple pieces of bread to make a quick sandwich, but it’s also good in a lettuce wrap, if you’d prefer to keep it low carb. We love the mix of creamy, crunchy, tangy, and sweet ingredients in this ham salad recipe!
How to:
To start, we always pop our ham in the food processor and process it until it’s a bit more fine than you’d get just by chopping it. This isn’t strictly necessary, so if you don’t have a food processor just chop the ham into small pieces. We just prefer this texture.

Add your ham to a mixing bowl and start tossing in the rest of the ingredients.
You’ll need:
- boiled eggs
- dill pickles
- onions
- dill
- parsley
- mayonnaise
- mustard
- vinegar

Mix all of these ingredients together and give it a taste. We don’t normally add any additional salt, because the ham, pickles, and mustard tend to be fairly salty on their own.
We make this a dill pickle ham salad by adding in plenty of chopped pickles plus fresh dill, but you really can’t mess this recipe up!

Feel free to add in whatever goodies you like or leave out what you dislike. I often have to skip the onions for my husband or we leave out the fresh dill because I don’t have it on hand. This ham salad always turns out tasty though!
Serving:
We like to serve this on a croissant, but white or wheat bread is delicious too!
We also put this in lettuce wraps or low carb tortillas when we’re looking for a low carb lunch.
Roll this up in a tortilla and cut into pin wheels for a fun finger food the kids will enjoy.

Storage:
Leftover ham can be kept in the fridge for 3-4 days.
Follow those guidelines with this ham salad, being sure to account for the time the leftover ham has already been in the fridge.
If your ham has been in the fridge for 2 days already, I wouldn’t keep the salad longer than 2 more days, for example.
INGREDIENTS
- 1 pound cooked ham
- 2 hard boiled eggs, chopped
- ½ cup mayonnaise
- ¼ cup chopped dill pickles
- 2 tablespoons chopped sweet onion
- 2 tablespoons yellow mustard
- 2 tablespoons chopped fresh dill
- 2 tablespoons chopped fresh parsley
- 1 tablespoon white distilled vinegar
- Cracked pepper to taste
- 6 croissants
INSTRUCTIONS
- Add the ham to a food processor and process until finely chopped. Alternately, chop the ham by hand, being sure to chop it into very small pieces.
- Add the ham to a mixing bowl with the remaining ingredients and stir together until combined.
- Spoon salad evenly between the croissants to make sandwiches.
