Hamburger Casserole

Ingredients:

 

1 lb ground beef
1 medium onion, chopped
2 cloves garlic, minced
1 can (14.5 oz) diced tomatoes, undrained
1 can (8 oz) tomato sauce
1 teaspoon Italian seasoning
Salt and pepper to taste
2 cups uncooked egg noodles
1 cup sour cream
1 cup cottage cheese
2 cups shredded cheddar cheese
1/2 cup grated Parmesan cheese
1/4 cup chopped fresh parsley for garnish

Directions:


Preheat oven to 350°F (175°C).
In a large skillet over medium heat, cook ground beef, onion, and garlic until beef is browned and onions are soft. Drain excess fat.
Stir in diced tomatoes, tomato sauce, Italian seasoning, salt, and pepper. Bring to a simmer and cook for 5 minutes.
Cook egg noodles according to package instructions; drain.
In a bowl, mix sour cream and cottage cheese. Stir in cooked noodles.
In a greased 9×13 inch baking dish, layer half of the noodle mixture, followed by half of the meat sauce, and then half of the cheddar cheese. Repeat layers.
Sprinkle Parmesan cheese on top.
Bake for 25-30 minutes, or until bubbly and golden brown.
Garnish with fresh parsley before serving.
