Ever had a Texas sheet cake? It’s a fudgy, chocolate cake with a rich chocolate frosting that once you try, you’ll want again and again.
So, obviously Texas sheet cake cookies were in order!
We kept things simple by starting with a cake mix, since (in my humble opinion) the star of a cake is the frosting! This frosting doesn’t disappoint either.
The chocolate frosting is boiled and then poured directly over the cookies. It firms up to a fudge like texture that is seriously irresistible.
But just because the frosting is the star, that doesn’t mean the cookies are bad…on the contrary, they’re dense and chewy and loaded with chocolate flavor.
Let’s do this…

Cookie Dough Ingredients – This cookie dough starts with a box of chocolate cake mix. You’ll also need some oil and an egg. This is a very simple cookie dough recipe!
Frosting Ingredients – This easy frosting recipe can be put together in no time with some sugar, butter, milk, and semi-sweet chocolate chips!
How to Make Sheet Cake Cookies:
Prepare the Cookie Dough – First up you’ll need to mix together the cookie dough ingredients. It’s very simple, just some chocolate cake mix, oil, and egg. Use an electric mixer until it is well combined.
When you’ve finished mixing grab a cookie scoop and start dropping scoops of the dough onto a baking sheet. Leave at least a couple inches of space between each scoop of dough.
Finally you’ll need to chill the dough before you can begin baking. Let the dough chill for about 30 minutes in the refrigerator before moving on.

Bake – When the cake mix cookie dough has chilled you can remove the baking sheet from the fridge and place it in a pre-heated oven. It’ll take about eight minutes to bake, or until the cookies are just set. When they’ve finished remove from oven and start working on the final step: frosting!
HELPFUL TIP!
Don’t overbake!
These cookies are the best when they have just set so that the center is still soft and fudgy.
Frosting – This homemade frosting recipe is so easy to make and it really takes this sheet cake cookie recipe over the top! In a small sauce pan over medium heat add the sugar, butter, and milk and stir frequently until the butter melts and the mixture begins to boil.

Let it boil for exactly one minute before removing the pan from the heat and dumping in the chocolate chips! Stir it well until the chocolate chips have melted and the frosting is a smooth consistency.
I think you know what to do next! While it’s still good and hot start pouring the chocolate frosting mixture evenly over each of the sheet cake cookies. Now the hard part: Let the frosted cookies cool for about 30 minutes so the frosting sets before serving!
