HOW TO MAKE RASPBERRY BROWNIES

Step 1 – Preheat your oven and prepare a 9×13 baking dish with parchment paper or aluminum foil.

Step 2 – Using a stand mixer (or hand mixer + large bowl), combine the brownie mix with melted butter, milk, eggs, vanilla extract, and, if using, espresso powder. Mix these ingredients until they are just combined, being careful not to overmix.

Step 3 – Turn off the mixer and use a spatula to gently fold the raspberries and chocolate chips into the batter, ensuring even distribution while being careful not to break the raspberries.

Step 4 – Pour the batter into the prepared dish, spreading it into an even layer.

Step 5 – Bake!

Step 6 – Let the brownies cool, then cut into 2×2 or 3×3 inch squares.

Step 7 – Serve and enjoy!

  • 1 box dark chocolate brownie mix
  • 1/2 cup salted buttermelted and cooled
  • 1/4 cup milk
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon espresso powderoptional
  • 1 cup raspberries
  • 1/2 cup semi-sweet chocolate chipsoptional

INSTRUCTIONS

  • Preheat oven to 350°F. Line a 9×13 baking dish (or similar size) with parchment paper or aluminum foil, extending pieces over sides for easy handling. If using foil, spray with cooking spray. Set dish aside.
  • Using a stand mixer (or a hand mixer + large bowl), mix together brownie mix, melted butter, milk, eggs, vanilla extract, and espresso powder on medium-high speed until just combined, about 2-3 minutes.

  • Remove bowl from mixer. Add raspberries and semi-chocolate chips to bowl, then use a spatula to gently fold them into batter.

  • Pour batter into prepared baking dish. Use a spatula to spread the batter into a smooth, even layer.
  • Bake for 25-30 minutes or until a tester toothpick comes out clean with a few crumbs.
  • Allow brownies to cool completely in dish before lifting out and cutting, about 30 minutes.
  • Serve as desired.
